Years ago, throughout the United States, family meal time meant sitting around the kitchen table every night. Eating off of a table set with a plate, fork, knife, spoon, drinking glass, napkin and a centerpiece was a nightly ritual. While rather rare in this day and age, eating off fine china, and enjoying stimulating conversation, is a great way to welcome in the evening hours.

In this blog we will be exploring the world of the dinner set, providing some examples of great ones, and letting you know where you can obtain them.
In ancient times, civilizations were often identified by the pottery remains that archaeologists found on their dig sites. In fact, many ancient peoples valued their dinnerware and pottery so much that they were even buried with it!
Today’s dinnerware is now commonly referred to as “China”. Why is this? This is because dinnerware is generally made out of porcelain, and it was invented by the Chinese over 1000 years ago. It was most likely invented during the Tang Dynasty, but the emperors of the Song Dynasty seem to get most of the credit. About midway through the Song Dynasty, around 1100 AD, the art and skill of porcelain making had spread throughout the East. By 1400 AD it had migrated to Europe.
The cost of importing fine dinnerware from China was every expensive, so only the very rich could afford to own it. As a result, the Europeans started to develop their own “China” factories. They modified the process a bit, using a different mixture of clays and other materials. This created a “softer China”, and had a duller or “softer tone” of the similar product being produced in China. In England, around the 1700’s, another form of “China” was starting to be developed. Called “Bone China”, it is made from a mixture of porcelain clays, and bone ash.
It’s interesting that many of our most collectable and valuable dinnerware is made from pottery, not porcelain. Sometimes known as “earthenware”, it was extremely popular during the 1950’s and 1960’s.
The most widely used pottery today is probably something called “Stoneware”. It seems to be almost everywhere these days, from stores to homes to restaurants. Stoneware pottery is fired at a very high temperature until it is completely solid and able to hold liquids. The process for creating Stoneware, like that of porcelain, originated in China…about 3500 years ago. Some of the most sought after pieces of Stoneware were created here in the United States (in the Virginia and New England areas to be more exact) in the mid 1800’s.

People assume that pizza was first made by the Italians. However, there is a lot of evidence that shows that pizza evolved simultaneously in several different countries. Examples of pizzas made 3,000 years ago have been found in Greece and other Mediterranean countries. In the USA, early pizzerias were either run by Greek or Italian immigrants.
The most common type of Greek pizza is a pizza made using typically Greek ingredients as toppings. These toppings include gyros, Greek meats, spinach, feta cheese, onion, Kalamata olives, fresh tomatoes and green bell peppers. Even with a Greek pizza, a tomato sauce covers the base onto which the other ingredients are added. However, the sauce usually only contains tomatoes and herbs, with no onions added.
The second type of Greek pizza is a pizza with standard toppings, but whose base is made in the Greek style. Unlike, Italian pizza a Greek pizza base is thick, springy, oily and chewy. This chewy base is achieved by rolling out the dough more thickly and placing it in a pan to cook instead of directly onto the bricks of the pizza oven floor. A small amount of honey and oil is sometimes added to the dough mix, which helps to keep the dough moist. At the very least the base picks up the oil that is wiped onto the cooking pan to stop the pizza from sticking.
Greek pizza is usually sold with a Greek salad and gyros. Gyros is a tzaziki sauce to which meat, tomato and onion have been added. Tzatziki sauce consists of strained yoghurt, garlic, salt, olive oil, cucumber, pepper and some sort of herb. Dill, parsley or mint are the most frequently used. Lemon juice is often added to taste.
Greek pizzas were first sold outside of Greece in pizzerias that were opened by Greek immigrants to the USA during the 1910s and 1920s. By 1930, there were 50,000 Greek immigrants within New York. As a result, it was in New York that Greek pizza was first made and sold to the general public. Unlike the Italians who opened shops selling only pizza, the Greek immigrants always sold other foods alongside their pizzas.

The act of pasteurization is one that has allowed the food industry to ship products that spoil easily- and keep their shelf life high enough to allow for consumers to use them. The process is compared to other technologies such as homogenization and sterilization.
One may notice that pasteurization isn’t the best in the taste category. While pasteurization is necessary and still makes a great end product, there are those that say the process takes too much flavor out of the item being processed. Where milk is concerned, one can taste the difference by selecting different brands of milk based on how they were sterilized.
Different price points in seemingly the same carton of milk usually are centered around the fact that some milk producers put in extra nutrients and helpful ingredients. This is done to offset the act of pasteurization taking out helpful enzymes, nutrients, and vitamins from the milk. The added benefit is that the helpers are still there, it’s just that the carton of milk will end up costing more.
New types of packaging are the new “buzz” in the milk industry. Pasteurization has its place as a helpful process in making the milk safe, while the packaging ensures that the milk stays edible for months to come. This type of packaging has been dubbed aseptic packaging. It’s what you might see apple juice or small cartons of chocolate milk in- kind of like a cardboard box mixed with plastic wrap.
Don’t forget that the world of pasteurization encompasses much more than milk. There are other foods and liquids that pasteurization has done a world of good for. This would include alcoholic beverages, but also foods like crab and nuts. Imitation crab meat especially is a product that can withstand spoiling, as it can be pasteurized and packaged to be shipped all around the United States. Other items might include cream, soy sauce, honey, and more.
In relation to homogenization, pasteurization is seen as a healthier alternative. Homogenization is a type of sterilization that instead attempts to make the entire milk product the same throughout the body of liquid in the container- effectively “smashing” fat molecules into each other. In the process, proteins and other good materials are being made worthless as they are going to bypass the digestion process, and not be absorbed as they normally would.

If you like steak then you know the way(s) you like it prepared. While some prefer their steak rare others like it very well done. There’s always the compromise of medium rare. Rare is usually very pink and still pretty raw. If it’s medium rare the steak will have a fully red color inside usually cooked at about 130 F. Well done steaks are cooked at about 160 F making the meat appear gray-brown throughout and slightly charred. Shorter cooking times retain more juice. Longer steak cooking times give you drier tougher meat.
The three ways of cooking a steak that we will focus on include: grill, fry and oven roasting. First, you should consider getting a 1-inch thick steak. Anything thicker than that makes it difficult to gauge doneness. It is best to season the meat before cooking. It doesn’t even matter which cooking style you choose. Start by sprinkling a good amount of salt and pepper over the meat. Rub crushed garlic clove all over the beef for additional flavor.
The first cooking option for your steak is to grill it. Most meat-lovers seem to really enjoy this. The barbecue needs to be really hot though. Try pouring a little bit of olive oil on a small brush or a paper towel, and rub down the grill slate before laying down your steak. Once your steak is on the grill reduce the heat to about medium and make sure to keep the lid down. After about 5 minutes turn the steak over, and let it cook for about another 5 minutes on the other side.
Using the second cooking method one basically tosses their beef into a frying pan. The stove should be turned on medium heat. Then warm up a teaspoon of oil for about a minute. Lay the steak in the pan but make sure to turn on the stovetop fan as well as keep the pan covered. If you’re cooking a 1-inch thick steak then you should allow it to cook for about four minutes on each side depending on how you prefer it cooked.
The last method, often used by restaurants, requires a couple of steps. When oven roasting your steak pre-heat the oven to 450 degrees Fahrenheit. Use a heavy frying pan that is oven-safe to cook the meat in. Turn the element on high heat and warm up the skillet until it is very very hot. Put a teaspoon of oil in the pan and let it heat up. Then, using tongs, gently put the steak in the pan and sear for 90 seconds on each side. By doing this you are able to lock in the juices. Next, place the pan in the oven to finish cooking and roast the beef for about 6-9 minutes again depending on how you like it cooked.
